The Stables Restaurant and Bar story began with a vision to create a buzzing yet secluded restaurant in the heart of Paddington over three years ago. The Stables began to take shape in the incredible sandstone building that has played a vibrant role in Paddington’s history in the 1800’s. The Stables Restaurant and Bar has brought this original charm to life with a chic makeover that is sympathetic to the building’s history. A muted palette of polished concrete, marble and touches of brass and leather. A warm yet sophisticated setting.

The Stables Restaurant and Bar is a stunning venue. What was the inspiration for the menu?
The inspiration behind the menu was a combination of using the best from the sea and land and the rest came willingly.
When someone comes to dine at The Stables Restaurant and Bar, what can they expect from the experience?
Guests can expect fabulous food and service, as well as a desire to return for more.
As an Executive chef, what inspires you when coming up with new dishes?
I love using fresh produce and fusing ingredients to create a dish with a taste explosion.
At home, in the kitchen, what is your comfort meal to make?
Pho is my comfort!
Being in the Hospitality industry, it’s hard work! What do you think are the 3 key things to success in a restaurant?
First and foremost, teamwork, communication, followed by consistency and quality fundamentals meaning, food, drink and service.
