We all know Reynold from the hit TV show Masterchef. He was the contestant known for making some killer desserts. His quality, sophistication and sheer beauty of Reynold’s audition dish hinted at big things. After licking the plate clean, the judges – and Australia – waited with bated breath for his next creation. His second week, Reynold did not disappoint. The Forbidden Fruit – a delectable chocolate mousse hidden under a raspberry coulis, ganache, and cocoa-butter on a chocolate soil – became one of the most memorable dishes of the season.

Reynold has now made it super easy for us to taste his treats. KOI the hub of all things yummy. I recently sat down with the dessert king himself for 5 Minutes.

Reynold, it’s an absolute pleasure to sit down with you. I’m not a massive fan of Masterchef but I’ll be honest, I was obsessed with watching what you would make next!
Describe yourself in 3 Words?

Stubborn, spontaneous, and selfish.

Fan-favourite from season seven of MasterChef Australia to now co-owner of KOI, dessert hotspot in Sydney’s Chippendale. What made you come up with the idea of opening a dessert bar?

Growing up, my brother, Ronald, and I have always had the idea of opening up a dessert bar. KOI has let us execute that dream. It lets us constantly be creative and live our passion every day.

What do you love about creating desserts?

It’s colorful, versatile, and challenging.

What is your favourite dessert sold at KOI?

Nomtella, our house signature. Brownie base, with espresso mousse and a salted caramel center.

Where do you get your inspiration from when it comes to cooking and creating new treats?

Sometimes from colors, other chefs, or visual landscape. For example, our newly launched Limited Edition Spring, “Fruit Cakes – We’ve taken inspiration from French pastry Chef Cedric Grolet and then put our signature KOI twist on it.

Do you find it hard to cater for people with dietary requests when it comes to sweet desserts? (The health junkies that want gluten free/dairy free person)

In this modern-day society, very much so as it can limit certain ingredients that are crucial to making a dish. However, majority of our displayed desserts are gluten-free.

What is your favourite thing to cook at home?

Mie Goreng. It’s a spicy fried noodle dish that I love to pack full of flavor.

Are you a Coffee or Tea kind of man? How do you have it?

Definitely coffee. Double shot latte.
