I’m not even joking!

Chargrill Charlie’s, the home of Sydney’s favourite chargrilled chicken and gourmet sides, my fav… which they keep promising is on it’s way to Melbourne! Have collaborated with qualified Nutritionist, Liv Kaplan of @livinbondi, to create Chargrill Charlie’s Anti-Aging Salads – three nourishing, detoxifying and anti-oxidant rich salads set to leave your body full of energy and skin glowing.

Nourishing Rainbow Roast – Roasted eggplant, sweet potato, beetroot and carrot, tossed with fresh spinach and topped with crumbled feta. Colour is key when it comes to health. Fresh vegetables rich in colours like purples, oranges and greens mean they are packed with antioxidants, polyphenols and phytochemicals, all which help our bodies to age with grace, energy and vitality. Using a rainbow variety of roasted veggies tossed with fresh baby spinach and a little crumbled feta, this Nourishing Rainbow Roast Salad is one seriously tasty way to get all of those micronutrients in one hit.

Golden Glow Super Slaw – Chicken breast, shredded red cabbage, tossed with carrot, avocado, coriander and sesame seeds, with homemade turmeric almond dressing. An anti-oxidant rich salad base of colourful red cabbage and carrot, massaged for ultimate digestion, allowing you to absorb all of these nutrients. Topped with fresh avocado which is rich in healthy monounsaturated fats, making them the ultimate beauty food that is a must eat for lush hair, skin and nails. Drizzled with a golden glow dressing made from anti- inflammatory spice turmeric. This golden root is famed for it’s health and vitality inducing properties and when you look at the bright orange colour, it’s no surprise!

Smoked + Spiced Vitality Salad – Chicken and chickpeas cooked in a smokey paprika and lime marinade. On top of a tahini kale salad. Spices like bright red paprika are filled with polyphenols and phytochemicals that allow our bodies to run at optimal health. Smoked paprika chicken and zesty lime, plus kale, being part of the brassica family of vegetables is a fabulous aid in the body’s natural detoxification pathways. With a little cucumber for hydration (hello hydrated skin!) this salad is not only tasty but will leave you feeling rejuvenated and energised. Topped with a classic tahini dressing, a fabulous dairy free source of calcium to keep our bones in tip top shape.

Don’t they all sound delicious and amazing. Well the good people of Chargrill Charlie’s have hooked me up with a tasty recipe. We can all make Golden Glow Super Slaw if we don’t live near a Chargrill Charlie’s!!!! Thanks guys, this makes me feel a little better about not having a local!

‘Golden Glow Super Slaw’
Sesame Chicken Slaw
Serves: 4

 Chicken Breast, shredded red cabbage, tossed with carrot, coriander and sesame seeds with homemade turmeric almond dressing.

 Dietary: GF, DF

 INGREDIENTS

½ small red cabbage, shredded

2 carrots, shredded

1 bunch coriander, stems and leaves finely chopped

2 tbsp sesame seeds

2 tbsp olive oil

1 tbsp apple cider vinegar

1 tsp sea salt

500g cooked chicken breast

1 avocado

 Turmeric Almond Dressing

1 tbsp almond butter

1 tbsp tamari

1 teaspoon turmeric ground

1 teaspoon toasted sesame oil

2 tbsp coconut cream

 METHOD

To prepare the slaw, place cabbage in a large bowl with salt, olive oil and vinegar. Using hands or tongs, massage the cabbage to break it down a little, until it reduces in size and becomes glossy.

Add in the coriander, and sesame seeds and toss to combine.

To make the dressing, combine all ingredients in a bowl and set aside.

To serve, top the slaw with chicken breast, avocado and an extra sprinkle of sesame seeds and coriander. Serve with dressing.

Chargrill Charlie’s Anti-Aging Salads will be available at all 10Chargrill Charlie’s stores in Sydney including Mosman, Neutral Bay, Willoughby, Wahroonga, Lane Cove, Woollahra, St Ives, Mona Vale, Rose Bay and Annandale from 3rd September through until the end of the month starting from $7.90.
